For the Crust (9 in. pan):

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter, chilled and cubed
  • 1/4 cup granulated sugar
  • 1 egg yolk
  • 1-2 tbsp. ice water

For the filling:

  • 2 cups fresh raspberries
  • 1/2 cup granulated sugar
  • 2 tbsp. cornstarch
  • 1/4 cup water
  • 1 tbsp. lemon juice

For serving:

  • Powdered sugar & fresh raspberries


  1. In a food processor, pulse together flour, butter, and sugar until mixture resembles coarse crumbs. Add egg yolk and 1 tablespoon ice water; pulse until dough comes together.
  2. If necessary, add additional ice water, 1 tablespoon at a time.
  3. Turn dough out onto a lightly floured surface and knead briefly. Flatten into a disk and wrap in plastic wrap.
  4. Refrigerate for at least 30 minutes.
  5. Preheat oven to 375°F. On a lightly floured surface, roll out the dough into a circle about 1/8-inch thick.
  6. Place into a 9-inch tart pan and trim excess dough from edges.
  7. In a saucepan, combine raspberries, sugar, cornstarch, water, and lemon juice. Cook over medium heat, stirring frequently, until mixture comes to a boil and thickens.
  8. Pour raspberry mixture into prepared crust.
  9. Bake for 30-35 minutes, or until crust is golden brown and filling is bubbly.
  10. Let tart cool completely before serving. Dust with powdered sugar and garnish with fresh raspberries.
  11. Serve with a dessert wine for a delicious pairing!
