  • 1/2 cup toasted almonds
  • 3 tbsp olive oil
  • 1 tbsp honey
  • 1 tbsp apple cider vinegar
  • Salt and pepper, to taste

  2. Place the arugula leaves in a large mixing bowl.
  3. Add the grapefruit and orange segments to the bowl.

  6. Drizzle the dressing over the top of the salad, and toss gently to combine.
  7. Serve immediately, garnished with additional walnuts and crumbled feta cheese, if desired.
